I have a whole newfound respect for lettuces as these beauties were covered with frost a couple days ago and now they are back in prime condition.   • Happy Thanksgiving, Y’all! You know it’s homemade when it doesn’t look perfect! Pictured here is my low sugar but strong spice Pumpkin Pie with Macadamia Nut Crust. I know it’s a little late for the recipe but it’s never too late to make more Pumpkin Pie. Very easy: Mix 2 cups Pumpkin purée with 2 eggs, 1/4 cup coconut sugar(or more if you like it sweeter), 1.5 tablespoon pumpkin pie spice, 1/2 teaspoon extra cinnamon and nutmeg for good measure, 1 tablespoon vanilla extract, 1/2 cup heavy cream (or Coconut cream) and a pinch of salt. For the crust, mix together 2.5 cups Macadamia (or almond) flour, 1/2 cup arrowroot flour, 2 eggs, 1/4 teaspoon salt and 1/2 cup cold butter (cut into pieces). Roll out the dough with a roller and carefully place into pie dish. Crimp edges. Bake for 12 min at 350. Remove from oven, cool and pour pie filling into crust. Bake on low rack in oven for 1 hour at 350. Start checking at 50 min. I recommend tenting it loosely with foil so the crust doesn’t burn. Cool and serve with a dollop of whip cream! Yum!!!!!!   • Fire ceremony with full moon in the background from my Full Moon women’s gathering last night. I drove across town and to be with women I mostly didn’t know to sit and commune around the elements. I feel it’s important for women to be together in this way even if it’s uncomfortable and unfamiliar at first. When women come together and reunite as sisters and have each other’s back and support each other instead of being competitors that’s what heals the world and is one of the most powerful things we can do.
