If you are reading this, it is likely that your main focus right now is keeping cool and quenched from the all pervasive heat that seems to last and last and last…ad i n f i n i t u m!
So, in order to get through this challenging period of time in the lone star state (or any other hot place you may be), it is important to eat cooling foods. If we eat seasonally, nature will naturally give to us the foods we are supposed to eat in the season we are supposed to eat them. And in the summer, nature gives us cooling foods to eat. Some examples of cooling foods are cucumbers, leafy greens, daikon radish, sprouts, peaches, nectarines, plums, apricots, berries, melons of all types and especially watermelon.
Watermelon is amazingly hydrating and cooling. It replenishes our vital fluids when we are dehydrated and nourishes the kidneys. I recommend finding watermelons with seeds. I am always suspicious of foods that are engineered to be seedless. Fruits and veggies are supposed to have seeds and watermelons are no exception. The seeds are easy enough to pick out or spit out but I recommend eating some as the seeds are very good for expelling parasites. Also, try to eat as much of the rind as possible to obtain the beta carotene it offers or else juice the whole watermelon for an amazingly delicious treat.
Watermelon and mint go great together and this drink will really help to keep you cool.
Watermelon Aqua Fresca |
- 2 cups, tightly packed, diced seedless watermelon
- 1 tablespoon fresh mint leaves
- 1 teaspoon honey, maple syrup, or a dropper full of stevia extract or sweetener of choice
- 3 to 4 ice cubes (more to taste)
- Watermelon balls for garnish
- Place all of the ingredients except the watermelon balls in the blender.
- Blend until frothy, about one minute. Pour into a glass, and garnish with watermelon balls.
- Serve right away.
