Vital Choice Alaskan Halibut is utterly delicious. Since you can not get fresh halibut all year long in your local markets, you can order this fish frozen over the internet and have it delivered. It’s not ideal (not local) but I’m thankful for the option to choose. I endorse Vital Choice because they have a superior standard for quality. Their fish are tender and amazingly yummy.
Alaskan Halibut with Lemon & Artichoke Hearts |
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 fillets of halibut
- 1 teaspoon ground coriander spice
- sea salt and pepper
- ½ cup dry organic white wine
- 1 tablespoon butter
- ½ cup artichoke hearts
- lemon zest from one lemon
- 1 minced garlic
- 2 tablespoons minced parsley
- sea salt and pepper to taste
- Heat oven to broiler.
- Sprinkle salt, pepper and coriander over fillets.
- Heat oven proof skillet over med-high heat with butter and olive oil. When fat is very hot but not smoking, place fillets in pan and sear fish for about 4 minutes on flesh side.
- Turn fish over and sear on skin side for 1 minute. Pour white wine into pan and let simmer for 2 minutes. Place artichoke hearts, garlic and lemon zest around fish.
- Add 1 tablespoon of butter. Add a dash of salt and pepper.
- Place pan in oven under broiler for 2 minutes and let fish and artichokes brown.
- Garnish with parsley and serve with lemon wedges.
