Baked Apple Chunks with Walnut (GAPS Friendly)

I served this dessert at the Weston Price conference in 2009 in Chicago. It was the first time a GAPS meal option had been offered at that conference.  It is simple, but yummy and very easy to make. Great served with whip cream or coconut cream.

Baked Apple Chunks with Walnuts (GAPS friendly)

Ingredients
  • 2 apples, peeled and cut into bite size chunks
  • 2 tablespoons coconut oil
  • 2 tablespoons rapadura cane sugar, maple or palm sugar
  • ½ cup walnuts (ideally soaked and dehydrated)
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • pinch of sea salt
  • Tools
  • A casserole dish
Instructions
  1. Heat oven to 375 degrees.
  2. Toss apple chunks with other ingredients (except for walnuts).
  3. Place in a casserole dish and bake for about 35-45 minutes or until tender; covered.
  4. Top with walnuts and bake 15 minutes more uncovered.

    I made this today. I tripled the apples, did 4 tablespoons of coconut sugar, increased nutmeg by 1/4 tsp, doubled the cinnamon and walnuts and used 3 tablespoons of coconut oil. it’s really good. i will pick up some cashew based ice cream for my husband and daughter so they can mix the two together.
